This small cidery, run by a couple in Sebastopol, California, focuses on heirloom cider trees. No two vintages are alike--this 2013 vintage was just released in June, 2014. (Note that the cider is cannot be labelled with the 2013 vintage date because of regulations for cider above 7% abv. However, Tilted Shed only producers cider once a year, using fresh-harvested apples, similar to a winery's vintage.) From the producers: "The Gravenstein sparkles in this bright, crisp cider. The refreshing acidity is balanced with a touch of sweetness and a bit of barnyard funk. We sourced the Gravs and other heirloom cider apples for this blend from organic growers in the Sebastopol area. The Grav lends its lovely aromatics and tartness, while a blend of sweet (low tannin, low acid) and bittersweet (high tannin, low acid) apple varieties impart flavor and lively tannins. This is Sonoma County heritage in a bottle. Great as an aperitif or celebratory bubbly, or pair with triple creme cheeses, salmon, and a hammock. Viva la Grav!"
