This Champagne is produced exclusively from estate grown fruit and is composed of 80% Pinot Noir and 20% Meunier which is aged for three years on the lees. It has great natural richness, and fantastic red cherry zing, but finishes quite dry and bright. -Gary Westby

    There are only 150 bottles of this great Champagne for the entire USA. I am so glad that we were lucky enough to get them! This is a blend of 80% Pinot Noir and 20% Meunier from the tiny 11 acre Thibault estate in Passy-Grigny and Verneuil. This has the texture, richness and power that fans of Blanc de Noirs love, but is also very fresh and balanced. It has tart red cherry flavors as well as subtle brioche toast and quite impressive concentration on the finish. This will make a great pairing for a sashimi night that has lots of salmon and tuna, or for the aperitif with any smoked fish.

    This wine is to die for! Very rarely do I taste a blanc de noirs where the red fruits shine through as purely as they do in this Thibault expression. There's just a lovely little tinge of berry that comes through on the finish, riding the fine bubbles and picture-perfect acidity all the way to the back of the palate. This was a great find by Gary, our buyer. I can't wait to start drinking this on the regular!

    The richness of this Blanc de Noirs is readily apparent and a broader, deeper, richer wine than Thibault’s Brut yet is still has the snappy acidity. The nose is definitely more Pinot Noir driven, more red fruit character comes through on the nose and in a more relaxed and drifting way in comparison to its strident brother. On the palate the wine is rich, supple and has more spice and fruit, I love the way the mousse rests on your tongue, it’s luxuriant while still being balanced. This is a wonderful Champagne, for me I’d consider this more of a cocktail, just sitting around and drinking in its supple complexity.
