I've enjoyed the Wyoming Whiskey and now count them as one of the best of the recent craft whiskey boom. They sent us many samples to try and while all were interesting NONE had the incredible depth and maturity of this special cask. A massive nose of freshly shucked corn, candied apricots, lacquer box and Tahitian vanilla. This one loves air and with some time you get some real flavor development. Fresh cacao nibs, freshly cut pine, barrel spice, walnuts and honey. On the palate, tons of sweet corny grain at the front. More candied stone fruit and a rich texture that remains lifted. A twinge of spice runs down the mid palate to keep it from being cloying. The finish is dry and brings big barrel spice, soft old drift wood and a slight leafy forest floor. While I'm extremely tempted to compare this directly to some of our Weller picks, we're really treading into new ground here. A triumph of a first showing from our friends in Kirby.
