The wine is obviously still very youthful and built for a long and profitable life in bottle, but offers up fine depth and nascent complexity in its aromatic blend of lemon, green apple, chalky minerality, warm bread, spring flowers and a nice topnote of citrus zest. On the palate the wine is crisp, full and promising, with a rock solid core, fine mineral drive, frothy mousse and a very well-balanced finish that closes with brisk acids and fine grip. The low dosage of this release is going to demand some extended bottle age to allow the wine to drink with a bit more gentle backend impression, but it should prove to be an excellent wine in the fullness of time. 2022-2055.
The NV Cuvée No. 740 Extra-Brut is based on the 2012 vintage and contains about 20% of reserve wines. All of the wines are fermented and aged for about 12 months in 225- to 4,000-liter oak vats. Malolactic is never blocked, but the Chiquet brothers do some bâtonnage. The white-golden colored Cuvée No. 740 offers a ripe, deep and elegant bouquet and reflects the more oxidative house style. On the palate, this is a pure, highly finessed and elegant cuvée that blends Chardonnay, Pinot Noir and Pinot Meunier. It is pure and salty, with an elegant texture and a long, well-structured finish. A great Champagne. My sample was disgorged in May 2017. Tasted April 2018. (SR)
Attractive grilled peach and nectarine fruits with mellow, spiced, woody notes in the background. The palate has upbeat fleshy peach and citrus fruit flavors. These grapes were harvested with plenty of power and exuberance. Drink now.
This is rounding out nicely and is very readable and correct with such precision. The fruit is expressive enough to compensate for the lack of dosage. Based around the 2012 vintage, the blend incorporates a lower percentage of base wines (20% as opposed to 30% in the past). The Chiquet brothers prefer to talk about villages rather than varietals, as they are obsessed with their terroir and therefore the grapes are noted to have been sourced from Aÿ, Dizy, Haut-Villiers, Avize and Oiry. Chardonnay makes up about half of the blend, with both Pinot Noir and Meunier to make up the difference, while the dosage is very low, at just 1.5 g/l. 17/20 points (JR)
