Perhaps Spain's most compelling bubbly, the Mas del Serral comes from a single, northwest facing 1.92 ha plot (originally planted in 1954) of Xarel-lo co-planted with Bastard Negre. Cultivated by strictly biodynamic means in highly calcareous soil rich with ancient fossilized marine organisms, and then given a generous 100 months on the lees, this is a serious sparkling for a meal. To honor the occasion of carrying the inaugural release of this epic bottling, from one of our favorite producers of sparkling wine, we opted to carry a limited quantity exclusively in magnum format.
