Farmer William Rose produces barley in the Highlands of Scotland without the use of artificial or chemical fertilizers, pesticides or herbicides. The farm is certified Biodynamic and specializes in organic cattle, sheep, oats, beans, grass, carrots, and other market crops. The key to Biodynamic farming is proper crop rotation and the barley here is only planted every 7 years. The unique crop was harvest in 2008 and distilled in 2009 before being aged in ex-bourbon and Tennessee Whiskey barrels. Aged 8 years before being bottled at 100 proof without chill-filteration.
