Medium garnet-purple colored, the 2015 Cabernet Sauvignon Estate has a very classic nose of cassis, warm plums and crushed blackberries with notions of cigar box, garrigue, damp soil and truffles plus wafts of menthol and underbrush. The palate is medium to full-bodied with a firm frame of grainy tannins and wonderful freshness, finishing long and minerally. Drink through 2045. (LPB)
A focused, tannic style, featuring tobacco and sage notes intermixed liberally with steeped currant and blackberry fruit flavors. Terrific cast iron and graphite hints flow underneath. The 2015 estate bottling of cabernet sauvignon from the Togni family is an outstanding wine that will be very long-lived and utterly brilliant at its apogee, but patience will be required. The bouquet is deep, precise and utterly classical in personality, offering up an aromatic constellation of cassis, sweet dark berries, cigar wrapper, a marvelous base of soil tones, gentle smokiness and a discreet foundation of cedary oak. On the palate the wine is very pure on the attack, full-bodied and rock solid at the core, with a fine chassis of seamless, buried tannin, excellent focus and grip and a long, classy and nascently complex finish. This is so beautifully balanced that it gives the false impression that it will come around in the middle term, but though the tannins are sweet and covered flawlessly, this has the chassis of a long-distance runner and will need fully fifteen years in the cellar to really start to properly stir. A fleshy deep, wine, the 2015 Cabernet Sauvignon Estate exudes richness and sheer exotic beauty from the very first taste. As always, the Togni wines need bottle age to be at their best. In 2015, time will mostly help the aromatics develop, as the tannins are quite soft for such a young wine. Expressive floral and savory notes develop with time in the glass, but the 2015 is years away from hitting its stride. It will be interesting to see where the 2015 goes in the coming years and decades. Sadly, yields are down a whopping 50%. (AG)
