This ambitious project from Moet Hennessy is an ode to terroir and modern tequila production. They begin with lowland fruit slow roasted in brick ovens. The intense mineral rich soils of the Tequila Valley are captured during the 4 day steaming process. This is then mingled with highland agave which have been roasted in autoclave to get a clean fresh expression of the already elegant high altitude plants. Fermentation is controlled using champagne and rum yeast. The result is a clean precise expression of the two main Tequila terroirs in one gorgeous bottle.
