We were skeptical, but the crazy people at Seedlip are doing something pretty special. A living relic from the tradition of the Renaissance era alchemists, this product is created essentially the same way we'd imagine gin to be made, botanicals steeped in alcohol and distilled. This extracts the essence of the plants and imparts them into the spirit, but the alcohol itself is only necessary in the extraction process and the flavors can be retained while completely distilling the alcohol from the wash. The result is something that's technically non-alcoholic, but definitely NOT water. The powerful essences of peas, dried grasses, spearmint, rosemary and thyme are captured in the bottle and while it's not at all familiar or particularly palatable straight out of the bottle, a simple splash of tonic and the experience is absolutely entrancing. Adding all the complexity, weight, and depth of a high quality modern gin without the buzz, the idea is to give a sophisticated option to designated drivers and non-drinkers for their mocktails, who've been relegated to drinking sweetened fruit juice for eternity. Nonetheless, we've seen this being used inventive applications in alcoholic cocktails as well. An unusual and exciting new frontier for the savvy bar crowd.

One of the fastest growing categories in the drinks world is "non-alcoholic spirits." At first what seems to be a bit of a misnomer is in fact a wonderful untapped world of flavor. With lessons learned from the perfume industry, Seedlip has created garden herb distillates that just don't contain alcohol in their final form. The result is a "gin like" libation (no juniper here though) that is focused on peas and other leaf/herb/pod ingredients. It's a wonderfully refreshing celebration of the English countryside. While your creativity is the limit of what you can do here, Seedlip recommends serving with tonic water over ice and garnishing with a handful of peas.
