The Dominode, as is often the case in the Pavelot cellars, is the top wine in the range in 2006, and is extremely promising. The beautiful bouquet jumps from the glass in a blaze of candied cherries, black raspberries, espresso, a bit of Echézeaux-like bonfire, great minerality and a touch of vanillin oak. On the palate the wine is medium-full, deep and intensely flavored, with a great minerally personality, an excellent core of fruit, and lovely cut and grip on the ripely tannic finish. This is a complete and compelling example of young Savigny. (Drink between 2016-2045)
(two-thirds of the vines are between 70 and 80 years of age and the remaining vines are approximately 20+ years old) This is almost always the best wine in the Pavelot range and it potentially is again with its ripe, elegant and pure nose of red berry fruit, earth, underbrush and subtle spice hints that are also picked up by the rich, full and quite serious flavors that both coat and stain the palate on the powerful and explosive finish. This is very firmly structured but there is no trace of dryness or under ripe tannins. Outstanding potential here. Drink: 2014+ *Sweet Spot Outstanding*
Good full red. Wild red berries and licorice on the nose, lifted by herbs and pepper. Discreet on the attack, then opens up and spreads out on the back half, showing a spicy sweetness and very good persistence. The biggest and deepest of these young 2006s, conveying an impression of volume without heaviness; this really punches above its class. Finishes with very fine tannins. (ST)
Pavelot's 2006 Savigny-les-Beaune La Dominode is predictably their most concentrated wine of the vintage, though it is also tartly red-fruited, deeply meaty, slightly bitterly herbal and dark chocolate-tinged, as well as chalky, making for a rather somber overall impression. This lacks the fascination of the Gravains today, but should be well worth following for 5-6 years at least. It should be interesting to follow its evolution for at least 3-4 years. (DS)
