    When our Champagne buyer thinks a wine is good enough to bring in hundreds of cases after one sip, I sit up and take notice. It can be scary taking a chance on a new producer, but when you know the wines are that good, it's worth the risk. The Solemme wines fit this description. The care the winemaker puts in is evident through his use of biodynamics, which clearly indicated he cares about his vine quality and health. This particular bottling may have been my favorite of the three, not least of which because it possesses a beautiful rose gold color. With floral notes and bright acidity to bring a fresh, crisp palate, it's made all the more special by being a rare 100% Pinot Meunier bottling.

    The "Ambre de Solemme" was a late harvest wine from a late harvest year, and the ripeness of the fruit creates some truly gorgeous aromas in the glass. Raw honey and golden-delicious apple waft in, followed by baked white peach, chalky minerality, some nuttiness on the edges. Great acid, and a much cleaner, drier finish than I had anticipated from the nose.

    On the scale of richness, this is a crisp clean and very vibrant rosé, and I love it! Made from vines planted over 50 years ago, this has a beautiful subtle onion skin color, with notes of caramlized green apple, white grapes, and flowers with just a hint of toast.

    Attention all biodynamic wine lovers! Domaine Solemme takes Biodynamics seriously right down to making sure that bottling isn’t happening on a ‘root day’ or vice-versa. The name derives from the first three letters of the French word for sun ‘Soleil’ and the last four letters for woman ‘femme’. ‘Ambre de Solemme’ is made up of 100% Pinot Meunier and gives a delicious Macintosh apple-skin aroma and even a slight apple skin bitter palate but with layers of melon and citrus fruit that comes all together making this champagne an easy Fall favorite.

    Solemme not only uses grapes from nearly 50 year of Meunier vines but extends their growing time as long as possible to allow full phenolic ripeness. With aromas and flavors of pink lady apple skins it is a lovely balance of texture, red fruits, sweet meyer lemon and racey acidity. Malolactic fermentation is purposely stopped so the wine's fresh integrity won't be lost.

    This 100% Pinot Meunier Champagne from Solemme is earthy and very dry, with notes of tart red currant and spiced apple. The palate is permeated by deep, clay like minerality, and finishes with a kick of bright acidity, making it a perfect wine for fattier dishes, or those who enjoy appetizers on the spicy side.
