Copalli White Rum is the flagship rum of the Copal Tree Distillery in southern Belize and brainchild of co-founders Anya Fernald of Belcampo Inc. and Todd Robinson, a conservationist and champion of Belize's pristine environment and local communities. A farm to bottle operation, Copal Tree Farms is the first certified organic farm in Belize. The farmland surrounding the distillery produces all of the heirloom variety sugarcane used to make the rums and is nestled within 22,000 acres of protected rainforest. The organic, single estate rum is made from just three ingredients: sugar cane, canopy rain water, and yeast. Nothing else is added - ever. Made from fresh-pressed cane juice, the barrel-rested rum is exclusively pot still distillate, gently aged in American oak bourbon barrels resulting in a rum with extra richness, a touch of bourbon sweetness and the wildly flavorful body of a cane juice rum.
