Winemaker's Notes: "Aromas bursting with honey, cut lemongrass and beeswax...delicate flavors of honeydew melon, meyer lemon pith and finishes long with pine and hazel nuts. Fruit Sourced from the Due Ponti vineyard in Gilroy California nestled between the Santa Cruz Mountains and the Diablo Mountain Range. The Santa Clara Valley is one of the oldest productive wine regions in the state boasting to be the first California commercial winemaking / winegrowing region since 1798. Although drinking well now, this wine will develop further depth and weight over the next 5 years. Served chilled with kumamoto oysters, spicy thai food, pork tacos or roast chicken with garlic and rosemary. Grapes were hand harvested and whole cluster pressed upon reception into the winery and fermented cold "sur lie" (on Lees) for 40 days in a stainless-steel tank. Finished wine was then aged for 4 months in a stainless-steel tank prior to bottling. Just 68 cases made."
