De la Finca is a single block at Vinya dels Fòssils, a site rich in chalk that gives a strong minerality to this blend of xarello (50 percent), macabeo (40 percent) and parellada. This traditional-method sparkler is bottled without dosage, keeping it edgy in acidity, with notes of lime and a crystalline sensation in its flavors of white fruit. The structure is vertical, tight rather than volumptuous, ideal with an Indian fish curry.
Made from grapes sourced from the 'Vinya dels Fòssils' vineyard, it is no surprise this wine reveals a distinct mineral note. There is a core of intense limey freshness on the palate with a pleasant bitter character to the citrus fruit, accented by a firm saline note. Raventós I Blanc is one of Spain's best producers of sparkling wines, although theirs are no longer classified as Cava. This has aromas of briny apple and yeasty vanilla setting up a stony palate with narrowing acidity. Flavors of lemon and orange peel are from the brut nature school.
