Goddamn I love Clynelish. I kind of just want to say the word over and over. Cline LEESH! Cline LEESH! Cline LEESH! It makes even better if you say it with me. The distillery was built in 1967 on the same site as the original of the same name. Due to malt shortages on Islay, the first distillery was fired back up in 1969 and produced some heavily peated malt that's now legendary, but the new distillery developed its own character and continues to produce some of the very finest malt Scotland has to offer. There's something about this weird little place on a small hill in the town of Brora that gets under your skin. The legends of the distillery are rampant and the feral cats as well. Clynelish is another of these blue chip Diageo malts that they don't like us to tour. I've heard of only a few people actually making it inside. Legend has it that the spirit coming off the still is unlike any other in Scotland. The spirit receiver is covered in an inch of thick waxy deposit. I've even heard that they cannot store the spirit in plastic as it seems to eat right through. Who knows if the legends are true, but the results after a decade of aging in exceptional wood speak for themselves. The crystalline purity and wild texture are what set it apart from the rest. That waxiness is still there in all its honeyed glory. 95% of the malt get's siphoned off for blends, so when we find a good cask we jump all over it. And this one sits right next to perfect. An absolute unit.

    Though typically used in blends, Clynelish always impresses me with its single malt releases. Even on the nose, the waxy quality that is exclusive to this distillery is readily apparent. It does not, however, overpower the delicate aromas of orchard flowers, citrus zest and honey. At first, the taste is primarily beeswax and stone fruit, wrapped in savory dough and dusted with almonds. But once you introduce water, the flavors expand miraculously - apples, peaches, pears and white pepper with a sweetly lingering finish. Truly a one-of-a-kind bottle.

    Brioche bread, sugar cookies, vanilla bean, and spices combine to make you think you walked into a bakery. Then the spices take a detour into more peppery territory including a hint of mustard seed. Somehow the contradiction works and it smells delicious throughout nosing. All the spices jump on the palate right from the get-go seconded by vanilla and some tropical fruit flavors, then the spice medley returns for a warming, rousing finish. Here’s a winter warmer for you.

    Whit good reason this is a popular producer that creates delicious and interesting single malts. The nose on this bottling is very inviting with honey and floral notes with an undertone of bees wax. In the mouth it is pure with a creamy aspect and round malty flavors. With a splash of water it becomes softer and the creamy notes are more pronounced.

    After being blown away by our Clynelish 14 Year Old I became quite intrigues when introduced to the 10 year Signatory bottling. A scant 224 bottles were produced of this Bourbon Barrel aged Highland single malt. There’s a surprising amount of fruitiness on the nose; from apple to pear to orange peel. It’s a veritable fruit bowl. Of course, it’s all so subtle and well integrated. The Clynelish pedigree is proudly on display here and the folks at Signatory surely know how to raise a proper whisky. I’m a big fan of this one.
