The Preuses was, appropriately, quite closed when I tasted it, opening in the glass with a reticent but profound bouquet of wet stones, white flowers, iodine, oyster shell and a subtle hint of apple. On the palate, the wine is full-bodied, multidimensional and concentrated, with electric energy, a lovely sense of reserve and a deep but taut core. While minerality is an abused term, it’s hard not to invoke it to describe its supremely stony, saline texture. One of the wines of the vintage in Chablis. Drinking Window 2024 - 2040. (WK)
The 2016 les Preuses chez Dauvissat is again, absolutely classical in profile, which means it is already delivering kaleidoscopic minerality in its vibrant nose of lemon, green apple, beeswax, layer upon layer of chalky minerality, spring flowers and a nice touch of orange zest in the upper register. On the palate the wine is pure, full and properly reserved in personality out of the blocks, with a great core, stunning mineral drive, great, snappy acids and a very, very long, focused and complex finish. A great, great Preuses in the making! (Drink between 2022-2060)
(13.2% alcohol): Pale, bright yellow. Very pure, subtle, fresh aromas of jasmine, white pepper and tarragon. Wonderfully silky, ripe and classically dry in the mouth, with its lemon drop and floral flavors communicating a perfect balance of sweetness and acidity. Really titillates the taste buds on the very long, subtle whiplash of a finish. Like the Forest, this stands out for its grain and purity. (ST)
An airy, elegant and cool nose displays aromas of lemon-lime, white peach and sea shore whiffs. The incredibly refined yet highly seductive medium-bodied flavors possess excellent mid-palate density while delivering superb length on the sneaky long finish. This is clearly still very young but the natural class of a fine Preuses is very much in evidence.
From bottle, the 2016 Chablis Grand Cru Les Preuses is the most reticent wine in the cellar, unfurling slowly with aromas of orange blossom, oatmeal, wet stones and honeycomb. On the palate, it's full-bodied, tense and stony, with excellent depth and dimension. It's not as lively or intense as the 2017 rendition, but it's a very serious wine that will demand some bottle age before it reveals all its plenitude. (WK)
