Nakamura Brewery focuses on utilizing Noto region cultivated Yamada Nishiki and Gohyakumangoku sake rice. There commitment to quality is evident in the gorgeous Daiginjo they produce. This super dry and ultra textured daiginjo isn't as simple as some of its competitors but retains the exquisite elegance that the style is known for. Pungent aromas of ripe mellon, pear orchards and honeysuckle. The palate is ultra clean and dry with a deep velvety texture and a subtle white pepper note that keeps it from feeling too fruity. Long rich and dry, this is a perfect pair for delicate complex dishes like nigiri, caviar or scallops.
