Tasting Notes

Mezonte is a non-governmental organization dedicated to promoting, supporting, and preserving the production and practices of traditional agave spirits of Mexico. The main objective is to create awareness of the cultural and biological value inherent in these incredible spirits. There's a particular emphasis on the spirits of Jalisco and Michoacan, but all agave spirits could be featured. The incredible organization began in a little bar in Guadalajara where Pedro Jiminez began to educate about these special spirits. Santos Juarez lives in Toliman, Jalisco where he is fully dedicated to his work and family. His mezcals are born from the areas volcanic soil and made exactly as they would have been 500 years ago. This is a blend of locally grown agave cooked underground and crushed by hand with hatchets. The still is made of copper and parota wood.

    Nosing the glass and my mouth immediately begins to water. Maybe it’s the Pavlovian response or maybe it’s the Serrano pepper, Havarti cheese, baked apple shrouded in a light pinewood smoke and lemon verbena getting the salivary glands going. Once it hits the palate a voluptuous, warm sensation takes over and gets sweeter the longer it stays on the tongue. As it diminishes, a soft white pepper and sweet menthol leaves you feeling refreshed and ready for whatever the world throws at you.
