The 2016 Vaillons from Domaine Drouhin Vaudon is a bit more forward in personality this year and will drink very well from the outset. The classic bouquet offers up a lovely mix of apple, spring flowers, a touch of beeswax and a fine base of chalky soil tones. On the palate the wine is deep, full-bodied, ripe and zesty, with a fine core, lovely generosity of fruit on the attack, bright acids and fine backend limestone mineral drive on the complex and quite wide open finish. This has plenty of acidity, but they play a supporting role here and the wine will be drinking with style from the moment it hits the market. (Drink between 2018-2035)
The 2016 Chablis 1er Cru Vaillons is very pretty, wafting from the glass with notes of green apples, dried white flowers and ripe Meyer lemon, framed by light reduction. On the palate, it's medium to full-bodied, satiny and textural, with tangy acids, good mid-palate volume and a pure, delineated finish. It was fermented and matured in stainless steel. Drouhin Vaudon was created in 1962, when Robert Drouhin took advantage of cheap credit from Credit Agricole to acquire vineyards in Chablis, a region he had long visited and admired. Today, the Drouhin's holdings in the region amount to fully 38 hectares, and since 2009, all have been bottled under the Drouhin Vaudon label. Classical in balance and style, the wines are classy expressions of Chablis and consistent performs, as demonstrated by their efforts in the challenging 2016 vintage. Given the quality of what's in the bottle, Drouhin Vaudon deserves more attention. (WK)
The 2016 Chablis Vaillons 1er Cru offers attractive linden, orange pith and light yellow flower aromas that would benefit from a little more intensity. The palate is well balanced with a slightly oily texture, more exotic in style than other vintages yet retaining decent balance, the finish demonstrating a dab of ginger. Fine (NM)
