Future Gin is distilled in downtown Los Angeles. The project is 100% women owned and operated. The idea is to create a classic dry gin style, but with California botanicals. All botanicals are processed (ground, peeled, etc) by hand at the distillery. It begins with a 16-hour maceration of juniper, coriander and fennel in 90 proof spirit. All the rest of the botanicals are infused in the still's gin basket. Low and slow distillation results in a high quality extraction of the intense array of botanicals: Angelica, Black Pepper, Cassia, Fennel, Orris, Avocado Leaves, Elderflowers,
Honeysuckle Flowers, Meyer Lemon Peel, Grapefruit Peel, Grains of Paradise, Grape Leaves. The heart cut leaves the still at around 170 proof and is gently reduced to 90 proof for bottling. This unique collaboration between Master Distiller Morgan MacLachlan, Beverage Director Mary Barlett, Coolhaus founders Freya Estrella and Natasha Case, with the magnificent importer and distributor of fine wines Amy Atwood is one of the most exciting new gins on the market today.
