Tasting Notes

Giovanni La Fauci's winery is located in Randazzo on Mount Etna and uses only the finest quality local varieties: Nerello Mascalese and Nerello Cappuccio. The vines are cultivated naturally and sustainably without any use of chemicals. The grape must is only fermented with native yeasts and the wine is then aged in botti from 220 to 500 liters for a minimum of two years. No stainless steel is ever used. The botti are stored in a natural underground cavern that maintains a temperature between 46 to 52°F all year. Racking takes place respecting the lunar phase and only a limited amount of metabisulfite is used upon bottling. "Akraton" means "pure wine" in Greek. Winery note: "Garnet red, aromas of ripe fruit, cherry, herbs, and dried flowers that lead into the same flavors on the palate. Pairs well with hard cheeses and savory dishes."

    This starts out with alluring aromas of light smoke and chimney ash which lead to subtle cherry, banana and apricot notes. The wine is delicate, complex and dry with very fine tannins that lengthen the finish. This should work equally well with both sophisticated and rustic fare but is great for swirling and sipping on its own as it evolves in the glass.
