Pere Mata works a scant 5 hectares mostly by himself in the Alt Penedes, a true vigneron organically working in an area with excellent, calcareous, fossil laden terroir, that is otherwise all too often farmed industrially. A blend of 50% Xarel-lo, 25% Macabeu and 25% Parellada, this cuvee shows the most subtle of toasty goodness, with a salty, citric quality, very fine bead and a texture that hints at careful cultivation of the vine and expert craftsmanship in the cellar. As an added bonus, the disgorgement date is always printed on the back label. This is undoubtedly one of our most elegant bottle of bubbles in stock.
