Although he already produces some of the most respected and sought-after wines of the Touraine, he’s not satisfied and is currently looking for new ways to express the old vines and rich landscape that is the Domaine Jean-François Mérieau... An arpent is an antiquated measurement of land that predated the French Revolution and it refers to several small, old-vine parcels of 60-year-old Sauvignon Blanc vines that are the foundation for this cuvée. It is harvested by hand, fermented by indigenous yeasts in stainless steel tanks and aged in tank for seven month with some lees stirring."
