Agostino Pavia and his sons, Giuseppe and Mauro, are staunch proponents of the excellent Barbera grown in and around their home village of Asti. But their advocacy for the lesser known Piemontese varietals doesn't stop there. Along with their outstanding single-vineyard Barberas, they also produce a sterling example of the little-understood Grignolino grape. Notes from importer Oliver McCrum: "Misleadingly pale color, but a very distinctive and flavorful wine; wild strawberries, rhubarb, a touch of herbs, the perfect wine with salumi or pizza. I put it in the fridge for 20 minutes to bring out the fruit. Screwcap. (Pino says his older customers used to buy all of this traditional indigenous wine type, often in huge 'demijohns' to be bottled later at home.)"

Grignolino is a very distinctive grape variety native to Piedmont. It combines pale, Pinot-like color with mouth-filling grip (some tannins). I think of this varietal wine as a dark rosé and I utilize it as one. Cranberry fruit flavors, herbal and rhubarb notes with great acidity. It is one of the classic matches with salumi, and it also complements a broad range of rich or flavorful summertime foods. I take this out of the refrigerator about a half an hour before serving, this really brings out the fruit. The perfect light red!
