In the ever more popular category of skin contact white wines, Slovenia is a go-to country for reference-point examples of the kind of quality that is now populating the market. For a number of years now (since long before these wines were hip among the "cool kids"), Kabaj has been a standard bearer for the Goriska Brda appellation. The dense sandstone and slate soils are ideal for producing vibrant, electric, aromatic wines from the native white varietals of northern Italy and Slovenia. The Luisa, named for winemaker Jean-Michel Morel's grandmother, is a blend of Rebula, Friulano, Beli Pinot, and Malvazija fermented in large oak vats and then aged for 24 months is small oak barriques (224L). There is an initial burst of tropical fruits that dominates the profile, but with air it takes on a more spicy character of pear skin and ginger along with a strident beam of acidity that gives it astounding texture. As food pairing wines go, this is about as versatile as it gets. *Orange wine*
