A combination of classic London Dry and New World gin. Woody Creek begins with a base of potato spirit (grown and distilled themselves from their own farm just 8 miles from the distillery). The botanicals are locally sourced and hand picked, read: Master Distillery Dave Matthews carries a bag on hikes and picks as he goes...The botanicals see a one day maceration before distillation. The result is a lovely gin with a classic backbone of juniper, corriander, angelica, and citrus peel combined with hibiscus, lavender, cranberries, grains of paradise and lemon grass.

The X factor that most people don't talk about in so many gins is the base spirit. The vast majority of gins on the market use neutral grain spirit purchased in bulk from some industrial distilling facility. They say "it's neutral, it doesn't matter." But the truth is, better gin is made when you use a better base. Woody Creek knows this and that's why they actually make their base spirit from potato grown just down the road. Giving themselves this leg up immediately sets their gin on a more advanced playing field.
