The Hermanos Sanchez Altamirano are 4th generation Mezcaleros learned from their late father Faustino Sanchez. The distillery uses some unique techniques, specifically the use of Hebradora (wood chipper) and Tahona used in conjunction. Agave is roasted in 10 ton stone lined pits over oak for 3 days and rested another 5. Then it is fed in to a wood chipper. The agave fibers are then placed in the tahona pit and crushed by the horse drawn stone. This reduces the workload on the animal and extracts significantly more juice from the flavorful fibers. The juice and fibers are fermented in Pine tanks for up to 5 days before double distillation on traditional 275 liter copper pot stills. Adjustments with puntas and colas. This batch of Jabali was distilled in November of 2019 and is one of the best Jabali we've ever stocked. The extremely low yielding and difficult to handle agave often shows unusual soapy or floral aromas, but the Sanchez brothers have reined those odd flavors in and this batch offers a full spectrum of floral, fruit, smoke and spice flavors. A truly special and unique batch from two of the best distillers in Chichicapam.
