Mark Squires writes: "Contrary to popular impression, Israel does not have just one uniform terroir. At Castel, one of Israel's iconic wineries, the wines are usually elegant, and the Judean Hills vines come in at an average altitude of 700 meters (up to near 800). Elegance comes from the terroir, but it is also the goal, obviously. Some of the older wines closer to the winery's beginnings showed less finesse, but even then, there was good balance. These days, Castel is mostly always graceful."
