Winemaker notes: "Hand-harvested at night. Upon entering the winery, the grapes are
hand-sorted, whole cluster into a 2-ton stainless steel lagar and foot-stomped. A native yeast fermentation takes place outside the winery, exposed to the cold Pacific Ocean air. After an extended post-ferment maceration, the wine is pressed off into neutral
barrique. After 12 months, the wine is racked and bottled unfined and unfiltered."
