The Estacada Distillery is one of Jalisco and the world's highest altitude at 7200 feet. A modern distillery, but with a traditional vision, the Master Distiller Alberto Herrera is using every tool to make the finest tequila possible. Agave is sourced at 8-10 years old, 20% from the highlands and 80% from the valley. Cooked in steel ovens without pressurization, the goal is to keep the microbiologically complexity low to allow their enological yeast to have the least amount of competition during the long slow fermentation. Distilled in stainless steel and aged for 2-3 years in a mixture of French and American oak. Never any additives or diffuser is used in the creation of this product. One of the best values on the shelf today.
