Domaine Henri Costal is a collaboration between Chablis producer Domaine Jean Collet and U.S. wine importer Kermit Lynch. The Les Truffières vineyard translates to, as you may guess, "where the truffles grow" and is located in the commune of Villy, north of the town of Chablis. The vines are farmed organically and the grapes are fermented in stainless steel. The wine ages a further 10 months in steel before spending three months in 600-liter oak casks. Bright tropical fruits and vibrant acidity contrast with a heavy textural element that rounds out the palate and gives the wine more weight than initially anticipated.
