Marie and Frederic Chauffray began their career in wine when they took over Fred's parents' wine shop in a suburb outside of Paris. They ran the business successfully for many years, but Marie always wanted to pursue winemaking. After eight years of searching, they found the perfect terroir in a small vineyard in the hills above the city of Montpellier. Since 2005, they have made wine their way by following organic and biodynamic principles and always with the utmost respect for nature. The Bilbo represents their everyday wine. It is composed of 60% Grenache, 20% Syrah, and 20% Cinsault. The wine takes its name not from the Hobbit but from the village of Bilbao in the Basque country of northern Spain. Marie and Fred are huge fans of Basque culture, and this wine is made specifically to pair with traditional Basque cuisine. Put a faint chill on it and serve it with lighter fare, such as meatballs, bacalao, or perhaps an omelette with a little chorizo. *Biodynamic, Natural Wine*
