The 1991 is more reserved and structured than most Jordan Cabernets. It exhibits medium to full-bodied, clean blackcurrant fruit, a subtle touch of oak, adequate acidity, and a spicy, long finish. Never the most intellectually challenging or decadent Cabernet, Jordan's Cabernet is to be applauded for its mouthfilling and pleasingly supple style that is delicious young yet can age well for 12-16 years. This winery is so successful that it is almost impossible to find their wines except on this country's finer restaurant wine lists." (04/95)
